You should post an idle log (car up to temp), and maybe one of the rpm drop to 500. Does the knocking sound speed up when you give it throttle? Is it just during start up, or while it's running? The fuel pump is also loud, so move your head close to it, and see if it's that.

I was thinking bad injectors, until I continued reading. It seems like you've done all of the maintenence to rule those out. What downpipe? STFT tend to fluctuate to both extremes, and your LTFT seems reasonable at -7%. The awkward throttle response may or may not be related.

Quite honestly, I was expecting this amazing sound when I installed my long Cobb Downpipe, and it was very subtle. A little more growl, but overall very tame. I think the best actual sound would come from replacing the muffler with a quality aftermarket can.
