Oil preference

Whats up guys i am Gino ive had my speed for about 6 years now and im in love with it 6 months ago car started smoking like crazy i did not know WTH was going on with it but catch can had milky substance sometimes it was just water but when i checked dipstick it was nothing but oil so no mixture anyway long story short im leaning towards head gasket so my mechanic is going to build my engine i just want to know what parts would you guys recommend changing now that the engine is coming apart LITERALLY! And also what oil would you guys recommend using for my build this is my list again thanks in advance guys

Dude building a motor because there is sometimes some water in your catch can is certainly a choice
It is by choice after a while since i just parked the car for a while i started the car and i had a misfire and with the diagnostics that my mechanic had he said that it was the head gasket cause of moisture in the cylinder walls and spark plug being corroded he did first mention that he could just do the head gasker and while we wait for the head to come back from the machine shop he could check piston rings and i asked wouldn’t u have to pull the pistons out to do that he said “YEAH BASICALLY!” Thats where the build started
 
The diag sounds a bit quick and dirty, maybe missing all of the tests one would do to confirm things. With the smoking were you loosing coolant? Or oil? rarely does a motor need a full rebuild cause of a head gasket issue that's been caught early enough. Which is what it sounds like in your case. There is more testing that can be done to verify the bottom end without pulling pistons out.

moisture/milk shake in the catch can or on the oil cap isn't a good indicator of head gasket issues.

Why go with such a big build? I don't see aux fueling on your list so there's no need for an S5 turbo. An S4 will max out stock fueling with better street manners and some room to go higher with aux fueling. Stock head bolts hold up fine when maxing out stock fueling (OEM head gasket).

When it comes to oil. I run Motul 5w-40 xcess Gen2 for euro cars.

Yes there was milky substance on catchcan an yes also on the valve cover cap when doing oil changes and tune up and nothing on the oil pan but this was the last year that i drove the car and yes there was small amount of coolant loss and my mechanic told me to try out the copper sealer and the smoke and coolant did go away for a while i didnt want to risk damaging the engine so i bought another car cause i had to finish HVAC school and i started buying parts little by little till i got to this point

About the S5 turbo and fuel system i decided to just run that cause the turbo comes in a bit later on the RPMs and that puts less stress on the engine This will be a daily driver for me i just want something reliable and not having to worry about if im pushing it too hard plus if i do the fueling upgrades thats like a $3500 more and my pockets are hurting rite now lol

By the way thanks for the oil reference when it was fully stock i used to run Pennzoil 5W-40 euro full synthetic but this was 6 years ago mind you i live like 10 minutes away from SpeedPerformance couple years after i went back to them to get spark plugs from them (because the will gap them for me) and asked again about the oil and they said Mobile1 but then again i had stock internals
Now that i wont have stock internals i wonder if i would need something else thats why my question about the oil
