Super negative Fuel Trim (~-18%), Knock retard, rebuilt engine

Hello fellow Mazdaspeed guys,
first of all: I've been through all the possible threads on this forum to my issue, went to the borders of all knowledge and ideas in my german group, discussing with many tuners, good mechanics and so on. I even have been to other forums aboutnon 4 bangers as well, yet I got no ideas left. I need your help!

To the history (people not caring in it can skip to the spec list): in december 2022 I bought my Speed 6. Had quite a shitty history, but since I'm learning to be a mechanic I took that car as a challenge (bad idea lol).
So I went to clean the intake valves as well as the injectors in September 2022 (Cleanmaster Motorparts, as some of you could know them). He also looked into my combustion chamber, seeing some messed up shit: Headgasket blew completely between cylinder 2 and 3, in between of 3 and 4 also on its way. It was time to take that engine apart, it had around 240k kilometers on the tachometer. Survived quite a time.
After 10 months of rebuild, I got it back in September this year. Also the turbo got upgraded, since it was dead too. Gave that to a local turbo mechanic, well known in germany. Apart from just repairing, they upgraded it too.

Before I keep going, a little spec list about my car:
- SRI Corksport, 3" air filter
- Upgraded Turbo
- 2nd kat delete
- 3" catback system, muffler: FMS (Friedrich Motorsport)
- Forge recirculating Blow Off Valve
- Cork Sport TMIC
- Cometic Headgasket, fitted to the engine
- Spark plugs NGK ILTR7IX-11 (one step colder)
- Freshly cleaned injectors, upgraded Seals by Cleanmaster Motorparts

So I went to tuning the car properly for what it has with a local tuner, tuned a lot of Speed 6 in my area, flawless on all of them.
Drove the engine for a while, so all could settle as it should. After that went for the first Logg drive.
Then it occured: Knock retard went to 6° at about 5k rpm WOT. But also sends knock retard when lower in rpm, giving it just a little bit of gas (~50% gas pedal).
Searched for a lot of issues, since I didnt monitor the LTFT to that time.
VVT Actuacor all fresh, engine timing is just fine. No vacuum leak, tested a few things there too.
Found out the spark plugs were gapped awfully. Bought new ones, gapped them to 0.65 mm, problem stayed. Also checked the EVAP line (all fine). Rail pressure and injector duty cycle seem fine to me.
Found a little exhaust leak in between of the 2 O2 sensors (but could that really be it?) and one right behind the racepipe. Didn't fix that yet honestly.

Drove some more Loggs to confirm some things.
Cold Start: LTFT goes to -10.9%, AFR at 14.4

Warm engine
Standing: LTFT settles around -19%
Driving without power needed (e.g. 70-100 km/h, cruise control on): LTFT at -10.9%
Driving shortly before turbo stes in (relative pressure of 0 bar): Fuel Trim goes to -13%
Driving in boost (anywhere from relative pressure of 0 to 1.2 bar): Fuel Trim Long Term and Short Term both go to 0%

Hot engine (Kat temp around 850°C)
Standing: LFTF at -16%
Driving without load: -10%
Driving shortly before turbo making pressure: -12.4%
Driving in boost: 0%


Also to the Kat temperature, so that I have told that: When I'm at around 170 km/h (100mph) the Kat temp easily goes to 900°C, if I then give a little load to it it extends to around 930°C and I think it could go further if I didn't take away the throttle).

I'm clueless. SO much money again went into this car and it just doesn't want to run right.
I have some Logg drives in many situations, if you request them I will send them in here. Sorry if I forgot some stuff, just ask, I'll be quick in respond.
I'd be happy about any help or ideas.

As soon as I had it back from the engine workshop, I put the first map of my Tuner on it, to get the engine used to its wear. That Map should've been a bit lean, but it was below Lambda 1 already.

After I drove the engine on that map some time, I got the next map which is currently on. I can't say it's because of the tune, since I don't have another one.
The car runs flawless, just as I drove the first Logg, got confronted with the knock retard and so read the LTFT, that's where shit got fucked up.


So even though it's right before the 2nd O2 sensor, it shouldn't mind?
