Mother in laws Expedition is getting seafoamed today. I replaced all 4 cats with magnaflows. Hopefully this finishes it and I can dedicate my time to my own cars again.

They will firm up the ride a slight bit, without seeming harsh. You will like the characteristics that bilstein valving improves on. Less squat, dive, and sway.

On mine I am running 500 front and 500 rear. The front is deliciously stiff, the rear is too bouncy. The rear is oversprung for the weight. A better setup would be 500 front, about 350-400 rear.

Our wheel wells are too small, even with your lift. Stepping down to 17s will give you a little more sidewall meat.
You might be able to go with a little more sidewall than total stock diamater, but not more than 10mm's probably. Anything more and you are going to have to deal with rubbing...
