I'm curious, what is the purpose of running a Mazda5 Alternator? Less drag on the engine or more output?

If you delete the AC compressor you can use a mazda5 alternator in it's place to get the stock one away from the turbo and free up space.
 
Has anyone swapped out the OEM thermostat for one of these yet?? Just curious as to thoughts on it, I'm currently getting a P0128 CEL and will probably be replacing the T-stat soon

Not yet, first batch should be shipping out soon. Be a perfect time to grab one and install since you're changing the t-stat anyway.
